I think this has nothing to do with VMWare itself, I believe it's more of a “new X input method” issue than anything else. I use fedora XI, I bet both distros updates it's input method. (Getting ç to work as '+c again in both Qt(KDE) and GTK was annoying)
Both Ctrl+Alt+(numpad)del or Ctrl+Alt+PintScr works.
Anyway, there should be a button “Send Ctrl+Alt+Del” at the top menu :/

I have updated the post to reflect that the issue is just for Ubuntu and the Linux version of the Remote Console.
